This quick, simple and nutrient-dense salad is ideal for those with minimal time and a busy schedule! Hence the name the healthy work salad! You can prep the entire salad before-hand in just a few minutes, besides the cut avocado. Making it easy for you to get more fibre, vitamins, minerals and heart healthy fats into your daily routine. I love taking this salad to work with me, since it looks complex and time consuming to make, yet being quite the opposite. It is incredibly simple, delicious and feel-good because I am fuelling my body with healthy, complex foods!
The combination of avocado, balsamic vinegar and olive oil is used as a dressing for this salad. Providing a creamy, satisfying and filling topping! Avocados are incredibly healthy, providing you with vitamin K, C, B5, B6, E as well as folate, fiber and potassium. While also are loaded with heart-healthy monounsaturated fatty acids, which is good-for-you fat!!
Healthy Work SaladPrint This
- Arugula (as much to fill half of your reusable salad tupperware)
- Spinach (as much to fill half of your reusable salad tupperware)
- 2 Tbsp Sunflower Seeds
- 2 Tbsp Pumpkin Seeds
- 1 Avocado
- 1 Tsp Sesame Seeds
- Olive Oil (top with as much as desired)
- Balsamic Vinegar (top with as much as desired)
Add enough arugula and spinach to almost fill your reusable salad tupperware container. Add the avocado and top with sunflower seeds, pumpkin seeds, sesame seeds. Drizzle on as much olive oil and balsamic vinegar as desired, for a light dressing.

Please remember to drink water after this salad, since it is quite high in fibre. While fibre is great to keep your system regular, it is most beneficial with an adequate amount of water to keep everything moving.
