    Chicken Veggie Salad Bowl

    This gluten-free Chicken Veggie Salad Bowl is the perfect healthy recipe for lunch or dinner! It is made up of simple, seasonal ingredients that are all filled with their fair share of protein, vitamins and minerals. It is one of my go-to chicken leftover recipes, since it is quick to make and I typically always have all of the other ingredients in the fridge (or in the garden in the summer).

    Chicken Veggie Salad Bowl

    Ingredients

    • Romaine Lettuce
    • Baby Kale
    • Cucumber
    • Cherry Tomatoes
    • Marble Cheese
    • Chicken
    • Olive Oil
    • Balsamic Vinegar OR Balsamic Glaze

    Instructions

    1. Wash and chop the romaine lettuce and baby kale. Add into a bowl.
    2. Add the cut cucumber, marble cheese, cherry tomatoes and chicken on top.
    3. Drizzle with desired amount of olive oil and balsamic vinegar.

    If you are making chicken the night before, make some extras with this salad in-mind to speed up the prep time. Fresh chicken is always delicious, but if you’re short on time using leftovers will help to still get a healthy meal in.

    This gluten-free Chicken Veggies Salad Bowl keeps well as a packed lunch for the office or to meal prep with.
