This Avocado Tuna Salad with Pumpkin Seeds makes for the perfect work lunch, being easy to make and comprised of healthy, nutrient-dense ingredients.
This was my first time ever using frisée (curly endive) and found it to be incredibly unique, almost like arugula combined with shoots or sprouts. It was quite light, yet needed to be chopped into small pieces to be best eaten (and not get all over your face when trying to eat it).
