Welcome back to this weeks ingredient feature! Showcasing seasonal and local picks to help you to select the freshest ingredients each week. This weeks ingredient of the week: TOMATOES, the veggie that is actually technically a fruit!
Tomatoes are an excellent way to get in your daily serving of lycopene and antioxidants! Meanwhile also supply your body with vitamin A, C, K and potassium. Tomatoes are a source of fiber and fluid, therefore may help to also “keep things regular” if you struggle with this.
This essential ingredient is perfect for sauces, salads, pizzas and stir-frys! I always have tomatoes on hand (regular or cherry), to toss into recipes for an added antioxidant burst. I love that tomatoes keep for a long period of time, don’t take up room in the fridge and can help to ripen other fruits around them. They produce ethylene gas, which help to accelerate ripening, therefore perfect for helping to turn those green bananas into yellow ones real quick.
